Un Café?


Good morning all,

Realisation struck that I have not posted anything coffee related for goodness knows how long… so I thought I would pay homage to my favourite stop in my city Boston tea party  (personal preference of course) I have tried every americano in the city centre over the years and I just can’t top my favourites over at Boston TP! What makes a good coffee? Only a true lover of the roasted bean will know, be it frothy milk, a silky latte, a strong flavour or a good locally/ethically sourced bean…indeed…then of course, there is the location, the atomosphere… many contributing factors go in to finding the perfect coffee shop! this is why I am indeed a “coffee person” Alchemy is involved on both the barista and the consumers parts, in a good coffee house and when they seamlessly combine atmospheric bliss and good produce that’s when it all comes together. Now, I realised there are people who don’t think as deep as I do about the coffee experience and to those people this post is most likely sounding like a deranged rant of an eccentric compulsive BUT to my fellow coffee lovers it’s perfectly compos mentis and “if you know, you know”

And Bostons TP do not disappoint on the food side either, especially the evert growing selection of Gluten-free cake! But that’s a whole other blog for a whole other day and I may have to go back and take some more pictures and drink some more coffee in the mean time!

Pancake day – for everyone!

Hi all,

I know I’m a little late but pancake day is a week-long thing anyway right!? There was a time when I thought I wouldn’t be able to indulge in days such as these but that was of course before I got less lazy and more creative with food. There are infact so many ways you can make pancakes other than the traditional way! Who would have thought you can, in actual fact NOT use eggs or milk! and in some methods not even flour! Here are two of my favourite ways (both include flour- GF of course)  great for gluten-free, lactose free lifestyles and even one without egg! 
So firstly –  this is a quick and simple one you can make in your nutri-bullet. I believe I have posted this one before. So excuse the repost but it really is delicious! 

Secondly – this one is the magic pancake! No eggs, no milk involved and still an incredibly fluffy result and you wouldn’t even tell it apart from a normal pancake. Now, I like to make the big scotch pancakes but you can add more of the water if you prefer thinner, crepe like pancakes.  

 
Ingredients:

1 cup of gluten free flour – self raising 

1 mashed banana

1 tablespoon of baking powder 

Pinch of salt 

Mix the flour and the baking powder together. Add the mashed banana and salt, mix and slowly add in water to preference, depending on how thick you want your pancakes, your batter will have to be yoghurt thick for scotch pancakes. Flip and enjoy! 

Top with whatever naughty or nice treats you wish and ….
