10 min peanut butter and cocoa sponge

So guys, it’s been a while huh? I do apologise! I’ve had a busy Christmas and new year but I’m back and hungry as ever! Now, I know a majority of the professional clean-eaters amongst us have got it covered when it comes to having a varied diet and having an abundance of clean treats and snacks but what’s one more!? So for the newbies, starting the new year with hopes of a clean, healthy diet and dreams of cakes and sweet palate pleasers, I give you the 10 minute sponge cake! 

Ingredients: 

Peanut butter – 2 tablespoons

Cocoa powder – 2 tablespoons

Coconut oil – 2 tablespoons

2 eggs 

Cornflour – 2 tablespoons

Vanilla essence – optional

Method:

Combine all the ingredients in a bo and mix into a batter. Bake at 200c for ten mins.

Serving suggestion -top with chopped nuts, raisins, fruit puree, natural yoghurt and it’s like a guilt free de-constructed gateau!

Super kale smoothies

Raw kale smoothies are the new lunchtime addiction! This one is kale, banana, pumpkin seed, sunflower seed and a little honey, good to take away the sweet tooth and sooo healthy ♡♡ you can make them with whatever fruits or veg you like, whether you want sweet or savoury flavours, with ice cubes, water,milk or fresh fruit juices, they are all so yummy and packed with iron, fiber, vitamins and antioxidants!

Blueberry protein pot

Here is another of my many protein rich dessert/snack/breakfast treats for you all, I dont make it very often as I limit my dairy in take these days but I like to indulge in a little greek yogurt every now and then because I find it best to vary my proteins and ‘0% fage greek yogurt’ is highnin protein and low in everything else.I usually make this and layer it up in a glass with other things I.e dried fruits and seeds.

Ingredients:

Handle of fresh blueberries

Two tablespoons of fage 0% greek yoghurt

1 tablespoon of cottage cheese

1 tablespoon of Ground almonds

Blend all the ingredients and all but a few of the blueberries in a blender and serve with blueberries on top.

You could also make a cheesecake with this recipe, add a bit more cottage cheese to the mix when blending and make a base using blended granola, honey, ground almond, coconut oil and cinamon, press into a dish and top with the blueberry mixture then refrigerate.
