Here is a really simple but ever so tasty salad I made today. If you find salads boring or uninteresting then you most certainly aren’t doing them properly! There are endless variations and ways to incorporate both flavours and vital vitamins,healthy fats and proteins! And on a hot day there is nothing more convenient. So here is my wholesome and super tasty summer day salad.
One large chicken breast (sliced and roasted)
1 large garlic clove
Round lettuce leaves
Half a yellow bell pepper
Salt and pepper
Pumpkin and sunflower seeds – now for this I used www.graze.com ‘fiery seeds’ as it added a little kick to the equation but you can use just plain ones and add some chilli or if you are feeling really adventurous, you could roast your own in some chilli and paprika!
Slice and dice all the ingredients, Squeeze some fresh lemon juice over the lot and assemble on the plate into your own ,desired, edible piece of salad art work and enjoy!
Vita-coco that is! – have you tried this stuff? Obviously I’m obsessed with the magic beans – if it has coffee in it, it’s mine! I love coconut water (and coffee,obvs!) and having tried and failed to mix the two in my nutri-bullet (wouldn’t recommend) this is a delightful and instant alternative.
